Shirotaki Shuzo launches “Nama Moto Nigori Sake by Jozen Junmai,” richly flavored by the traditional “Kimoto” method of brewing

On February 1, Shirotaki Shuzo (Yuzawa-machi, Minamiuonuma-gun, Niigata Prefecture), the brewer of Kozen Nyosui, released a seasonal limited edition of Nama-moto Nigori Sake by Jozen Junmai (720 ml/1485 yen including tax, 300 ml/715 yen, 8-9% alcohol content).

The sake is brewed using the traditional "kimotsukuri" method, in which the lactic acid bacteria necessary for sake brewing are raised from scratch, giving the sake's tank of unrefined sake a complex and rich flavor. The sake is then pressed to produce "nigori" sake, which preserves the full flavor of the rice, resulting in a bottle with a mellow texture and a refreshing acidity that harmonizes with the taste. It has a nostalgic and comforting taste, just like the lactobacillus beverages you remember from your childhood.

The "by Jozen" series is a new series derived from "Jozen Josui" in 2022. The lineup includes a new type of sweet and juicy sake that is easy to drink with low alcohol content and recommended for sake beginners.
