50-year-aged sake “Hatsugu” online only, “Junmai” and “Honjozo” to be released at the same time

HACHIKEI, a brand dedicated to the long-term aging of sake, has begun limited online sales of "HACHIKEI KIKI 50|Junmai" and "HACHIKEI KIKI 50|Honjozo" to mark the 50th anniversary of the sake's aging in 2023.

Junmai" and "Honjozo" are both priced at 250,000 yen (excluding tax).
The manufacturer is Sawanotsuru Corporation, which has been brewing traditional sake for over 300 years in Nada, a sake-producing region.

Hatsugu" is a rare aged sake that will celebrate its 50th anniversary this year, based on the concept of traveling through time.

■ Product Background
Domestic shipments of sake peaked in 1973, reaching 1.77 million liters. (Since then, it has been on a downward trend, falling to 410,000 liters by 2020, about one-fourth of its peak.)

The brewing of "Hatsugu" took place in 1973, just at the peak of its production period. At a time when the more sake was made, the more it sold, some brewers dared to let the sake sit for a long period of time to mature.

In strictly temperature-controlled cellars, the quality and taste of sake changed year by year, and this practice was eventually passed on to the next generation.

Generally, aged sake slowly deepens and darkens in color during the aging process. However, as it aged further over the years from there, some of the components sank down to the bottom as lees, and the color changed to a clear, clear color like amber that allowed light to penetrate through it.

It was a discovery that I could not have come across without actually spending more time with it. And the taste is still being refined as it matures.
